Orange county fudge

Great Fudge Recipe:

Here is my great chocolate fudge recipe that makes the best fudge you
ever tasted, even better than Macinaw Island Fudge.

In a good heavy sauce pan (I use my Revere ware) combine 1 ½ cubes of butter or margarine, 4 ½ cups granulated sugar and 1 can of evaporated milk.  Cook over medium/high heat and when it comes to a boil start timing and cook for 7 minutes.  This is the important part and you don’t have to use a candy thermometer.
 
In a heavy duty mixing bowl combine 3,  8 oz. Hershey Bars, broken up, 12 oz. bag of Chocolate chips, 1 jar of marshmallow cream.  Chop 2 cups of walnuts or pecans (I use pecans) and have them standing by.  I keep my nuts in the freezer and it helps speed the cooling process.  With my Kitchen Aid mixer I use the heavy paddle or dough hook, either works well, but don’t use the whip, it’s too flimsy for the fudge.

When the sugar/milk mixture has boiled for 7 minutes, remove from heat and pour it over the chocolate.  Stir a little with a silicone spatula and then turn the beater on.  Let it beat while you’re chopping the nuts or lining your jelly roll pan with foil.  I use a jelly roll pan because it’s the perfect size for the 5 pounds of fudge. 

I line the pan with foil and then butter with the butter wrapper, or spray with Pam.   After the pan is prepared and the fudge is starting to cool, it should be holding it’s shape in the bowl.  Add 1 teaspoon of good vanilla extract.  Last add the chopped nuts.  Beat until well combined.  Once you turn the beaters off you need to work fast and get it into the pan, spread evenly and let set in cool place.  

 NEVER put chocolate in the refrigerator!  This is a never fail recipe.  If it doesn’t set up perfectly, you didn’t cook it long enough, or use the right size chocolate bars.  When they started changing the size of the bars  (they used to ALL be 8 oz., but you can still get the 8 oz. ones at some Wal-Marts) it got me a couple of times and I ended up with some great chocolate fudge sauce for ice cream!
